Carrot Sweet Potato Zuppa
This is a super little soup recipe that can be carrots and sweet potatoes but you can also do with leeks, yams, parnips, cauliflower, broccoli, beets, squash etc. Make zuppa fun – put in little bowls a variety of toppings, like shredded cheese, cherrios, crackers, toasted bread cubes, croutons, chopped veggies etc. Thicken this soup by adding La Vache qui rit cheese (Laughing cow cheese) or cream cheese, so you can use add pasta sauce.
- 1/2 onion, chopped
- 1 tbsp butter
- 4 cups chicken broth
- 2 cups carrots, chopped
- 1 large sweet potato, peeled and chopped
- 1/2 tsp curry
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp sugar or honey
- 1 tsp lemon juice
- 1/2 cup plain yogurt
Boil carrots and sweet potatoes in chicken broth. Simmer until tender (20 mins). Add more water if broth level goes below vegetables.
In a saucepan, saute onions in butter until translucent then add to boiled vegetables.
Cool mixture and then blend. Depending on blender you have (Magic Bullet, Hand blender, food processor), blend mixture so it is pureed and smooth. Add spices and blend again.
Return to heat and simmer for 15 minutes.
Blend in yogurt right before serving.
Can put toppings on the zuppa (ie. crackers, toasted cubed bread pieces, shredded cheese, chopped veggies (tomatoes, cucumber, etc.))
