Classic Bran Muffins


  • 3 cups milk or buttermilk
  • 3 cup bran
  • 3 eggs
  • 1 cup vegetable oil
  • 1 tsp vanilla
  • 1 cup brown sugar
  • 3 cups flour
  • 3 teaspoons baking powder
  • 3 teaspoons baking soda
  • 2 teaspoons salt
  • 1 cup raisins or dates

Mix 3 cups milk with 3 cups of bran – let stand for 5 mins.  Add 3 eggs, oil, vanilla and brown sugar.

In a separate bowl, blend together the flour, baking powder, soda and salt.

Mix the flour mixture into the milk mixture then stir in raisins or dates.

Pour into lined muffin tins and bake for 25 mins at 350 degrees.

Eat your bran! Your GI tract will be happier if you do!
