Orange Fish
Any kind of fish fillet can be used but sole is the best as it has a soft flake texture and it can come boneless. You can easily microwave this (caution, do not overcook as it will then become rubbery) or place it in foil and bake in over or in BBQ. If camping, super little meal over the campfire. Nice to serve with rice or pasta and just add green vegetable or spaghetti squash.
- Sole fillets (fresh is the best, or thawed if frozen)
- dots of butter
- few tablespoons of real frozen orange juice concentrate
- salt & pepper to taste
- any kind of favourite spice (dill, minced onion, rosemary…)
Place fish fillets in foil, dot with butter, orange concentrate and spices. Wrap and seal. Place on baking sheet and bake in a 450℉ oven until cooked (approx 10-15 mins) – until white and flakey.
If using microwave method, place in microwave-safe casserole and cook under medium power. Every microwave is different so adjust time according to directions.
