Whole-Wheat Gingerbread Cake
A healthy snack to nibble on during those mid-afternoon ‘uglies’.
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour (*do not substitute)
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup buttermilk (or 1/2 cup milk with a drop of vinegar added)
- 1/2 cup applesauce
- 1/2 cup molasses
- 2 egg whites
In bowl, combine flours, brown sugar, cinnamon, ginger, baking powder and baking soda.
In smaller bowl, combine milk, applesauce, molasses, egg whites. Add this liquid to dry flour mixture. Beat until combined.
Pour into baking pan and bake 30-35 minutes or until wooden pick inserted comes out clean.
Cool and cut cake. Can dust with powdered sugar and cinnamon if wish.
Can be served warm with applesauce.
