Yum Bran Muffins
This is a recipe I found ages ago before children. I found the clipped recipe tucked in an old recipe book of mine. Must admit, I NEVER bought pre-made, jarred baby food to feed my babies but did purchase a jar or two specifically for this recipe. So if you do have a jar laying around in your pantry, go ahead and use it for this recipe (whatever the flavour it is – as does not need to be prunes). Or just go ahead and buy a jar to have just for this recipe. It is a moist, easy recipe to mix up and bake. Make this batter the night before and bake in the morning. Your family will wake up to a beautiful smell!
- 1 cup 100 percent bran cereal (such as All-Bran or Bran Buds)
- 3/4 cup flour
- 1/4 cup white sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/3 cup honey
- 1 - 2.5-ounce jar baby food prunes
- 2 tablespoons molasses
- 2 egg whites, lightly beaten
- 1 cup buttermilk (or milk with 1 tbsp vinegar added into it)
- 1/4 cup drained, crushed pineapple
- 1/2 cup raisins
Combine first 5 ingredients in a large bowl. In a small bowl, combine the next 5 ingredients; mix well. Add honey wet mixture to the dry flour mixture, then stir in pinapple and raisins. Refridgerate, covered, overnight.
Preheat oven to 375℉. Spray muffin tins with non-stick cooking spray or use paper cups. Spoon batter until each muffin cup is 3/4 full.
Bake 22-25 minutes or until toothpick inserted in centre comes out clean.
